A twist on the classic Tom Collins recipe, which is always a winning combination. The Raspberry Collins tweaks the classic with the addition of fresh raspberries gives it a great blend of ssweet sugar syrup and tart fruit.
Ingredients
50ml gin
A dash of simple sugar syrup
A few raspberries
Squeeze of fresh lemon ounce lemon juice, freshly squeezed
Soda water
Instructions
1. Crush your raspberries and sugar syrup together in your favourite cocktail glass
2. Add the gin and lemon juice, and stir to combine.
3. Fill with ice and add top with soda
Lovely garnish with raspberries, lemon and mint!
