The Bees Knees

The Bees Knee’s was created during prohibition in the United States. The name comes from a slang term popular in this period, which simply means “the best”. They were not wrong. The man credited with creating this delight is Frank Meier – the Austrian born, part-Jewish, bartender-royalty who became head bartender at the Ritz in Paris when it opened its doors.


  • 2 oz. 1823 Dry Gin
  • ¾ oz. lemon juice
  • ½ oz. honey syrup

Steps to Make It

i. Pour the 1823 Dry Gin, lemon juice, and honey syrup into a cocktail shaker with ice. Shake until well-chilled.

ii. Strain into a chilled cocktail glass.

iii. Finish by garnishing with a thin lemon slice or lemon twist.
